Hubei is known as the "Province with a
Thousand Lakes". The unique geographical situation has given
rise to the dominance of aquatic food, which is as the feature
of Hubei Cuisine. Hubei Cuisine is distinguished for hundreds
of fish dishes, dozens of fish feasts of local flavor and the
technique of quick boiling fish.
Hubei fish feasts mainly fall into two types. One is the Uni-Fish
Feast, that is, a feast that uses one type of fish as the main
material all through, including cold and hot dishes, main dishes,
soup and even the staple. Wuhan Fish Feast., Hanchuan Murrel Feast,
Jiangling Eel Feast and Mianyang Black Carp Feast are examples.
The other type are feasts using aquatic food in company with poultry,
egg, meat, milk, vegetables, fruits, mushroom and bamboo shoots,
such as the Great China Fish Feast and Laotongcheng Fish Feast.
Since most aquatic resources are soft and tender, the chefs have
to use many techniques to produce diversity. For example, with
special cutting techniques, a mandarin fish can be carved to look
like a squirrel, a lion, a bunch of grapes or a pineapple, or
turned into fish rolls, fish cakes, sliced fish, shredded fish
and fish porridge, giving a great variety to the whole fish feast.
