Skewered Mutton
The mutton cubes roasted on a skewer are a traditional snack of the Uygur people and have gained the appreciation of people all over the country.

Mutton Meal Eaten with Fingers
The main materials for the meal include rice, mutton, carrot, onion and vegetable oil. There are many ways to prepare it. Besides mutton, people also use the meat of ox, horse or snow pheasant. Raisins, apricot, walnut and other dried fruits are often applied to make sweet or pure vegetable meals eaten with fingers.

Stretched Noodle
The noodles are stretched from top-quality flour. Among all the local snacks in Xinjiang, these noodles are most popular with the people. Pliable but strong, smooth and pleasant, the noodles are truly enjoyable.

Steamed Thin-Wrapper Stuffed Bun
The filling of the bun is top-quality mutton. It is a favorite among the Uygur people. The features of this bun include paper-thin wrapper and tender mutton filling that is rich but not oily.

Cold Noodle
Also called Yellow Noodle by the locals, they are a perfect snack in summer. They are made by mixing the flour with local soda and fleabane ash solution. The best soda is found in the reed of the Toksun County, and the fleabane ash is produced in Turpan.
