Introduction |

Guizhou Province
sits at the northeast of the Yunnan-Guizhou Plateau in southwest
China.
The province is full of mountains, which take up 97 percent
of the 176,000-square-km area
of the province. The capital of Guizhou is Guiyang. Guiyang
dishes belong to the Sichuan
Cuisine, which feature fragrant pungency. But the dishes prepared
with the local materials are
quite distinct: the salty and sour braised fish, the salty
and sour eel slice of Dushan, the potted
chicken with gastrodia elata tuber (medical herb), etc. |
